Our Turkeys And Geese Come From A Small Scale Farmer Just A Few Miles Off Mersea Island.
Our Birds Arrive At The Farm Just A Couple Of Days Old And By Early July They Are Free To Roam The Farm, Where They Forage On Orchard Fruits And Insects And Home Grown Milled Barley.
Reared And Processed On Farm
Producing A Flavoursome Turkey Is To Ensure That It Is Processed When The Meat Has Matured Fully. We Allow Our Turkeys To Grow Slowly, Over A 26-27 Week Period To Ensure Optimum Quality In Terms Of Flavour And Texture. This Is Almost Three Times As Long As A Standard Turkey!
When Ready Our Professional master Butchers Dry Pluck The Turkeys And Geese And Finish Them By Hand Which Helps Keep In Flavor.

Traditionally Oak Smoked Salmon Available In Whole Sides Or 200g Packs
Our Smoked Salmon is slowly cured using mineral salt to reduce moisture contents while retaining the natural oils in the fish. After chilling we gently smoke it over Oak shavings and dust to give it a rich and distinctive flavour. After a night in our 150 year old kilns it is moved to the chiller for maturation and then packing.
